The nose exhibits additional breadth in the form of white flowers and pear aromas that offer just enough Chablis typicity to be persuasive. As is usually the case the medium-bodied flavors are a bit more concentrated with a lovely minerality that adds a sense of lift to the slightly more complex and longer finish. This should drink well young but age well too.

The Defaix domaine owns 3.5 hectares of this 5 hectare 1er Cru. The resulting wine is long-lived and displays remarkable finesse and length, a classic Chablis. One often encounters the flavors and aromas of bergamot, acacia and honey in the Les Lys alongside a compelling freshness, a wine of excellent tension.

There is an interesting, if very subtle, minty character to the ripe, expressive and attractively layered nose of both white and yellow peach, nectarine and iodine along with a plethora of floral elements. There is outstanding volume to the almost painfully intense flavors that coat the palate with dry extract on the hugely persistent finale. This is a serious and very powerful built-to-age effort so at least some patience will be required.
